This is the one. The very first barrel All Casks has ever put its name on.
In May, a handful of us made the trip out to Copper & Cask in Rhode Island, tasted through the barrels available, and landed on a 9-year straight bourbon finished in a Calvados barrel — an apple brandy cask from Normandy. It shows.

Tasting Notes
Nose: Baking spice and brown sugar right up front, with a warm baked-apple-pie quality from the Calvados finish — more pastry crust than raw fruit.
Palate: Sweet on entry — apple cobbler, cherry pie filling, a streak of blackberry jam — with butterscotch and baking spice carrying through the middle. The Calvados barrel is doing real work here without burying the bourbon underneath it.
Finish: Long. Maple syrup and apple-sauce-y fruit linger well after the sip, with the spice sticking around longest. At 120.2 proof there's real heat, but it doesn't run you over — everything stays in balance.
